
K-BOB’S Steakhouse was founded in 1966 in Clovis, New Mexico. With its affordably priced Steaks, stocked-full Salad Wagon, and dedication to serving ranching and farming communities, the brand expanded across Texas, New Mexico, Colorado and Oklahoma throughout ‘70s and ‘80s. It wasn’t long before K-BOB’S planted it’s flag in Ruidoso, New Mexico in 1976.
Ed Tinsley III acquired the K-BOB’S Steakhouse brand in 1992 after the company had fallen into bankruptcy. He set out to modernize the food offerings and restaurant atmosphere, notably adding full beer, wine and liquor at a signature Horseshoe Bar, which you will find to this day here at the Ruidoso restaurant.
In 2019, almost 30 years later, Ed’s passion for K-BOB’S led him again to re-invent its offering to the community. He partnered with 44 Farms out of Cameron, Texas, to bring the highest quality registered Black Angus beef to Lincoln, County. He believed in it so passionately that he also introduced its genetics at the Flying W Diamond Ranch, the Tinsley’s third generation cattle operation.
Some saw it as a revolutionary concept for the restaurant business. But Ed thought it was pretty simple - he believed you could serve the highest quality beef at prices that America’s heartland could afford.
Ed Tinsley passed away November 1, 2022 and left the K-BOB’S and Flying W Diamond Ranch legacy to his wife Meredith Tinsley, and children, Edward Tinsley and Ede Booth. To this day, 44 Farms genetics are raised at the Flying W Diamond Ranch and Meredith, Edward and Ede continue to operate the restaurant, proudly celebrating our mission of: "Church, Family, School... then K-BOB’S”.
